Tis the season for pumpkin spice EVERYTHING!!! I’ll be honest….I absolutely cannot stand pumpkin spice…the favor, the smell, it’s all horrible to me! Years ago my mom made these cookies and I was pretty hesitant to try them because that’s how much I do not like pumpkin spice. But my goodness they were good! Still a bit too much spice for my taste but it was very very good! Since then I have been making them for my family. I did alter the original recipe just a touch. So if you are like me and don’t like spice then I suggest buying a plain yellow or white cake mix, that will remove all the spice and what is left is a sweet pumpkin cookie which is surprisingly tasty! If you are one of those pumpkin spice enthusiastic people then you may even want more spice, in that case buy a can of pumpkin pie puree instead of plain pumpkin. This will give you the spice from the spice cake as well as the spice from the pie filling. This recipe comes together in the time it takes to preheat your oven!


This recipe I think would also do well as a campfire recipe as long as you have the means to mix it on the campsite. If you have anyone with a dietary requirement you can easily swap the cake mix for a gluten free or sugar free variety. If your going sugar free maybe add a tablespoon or two of honey or a natural sweetener just to balance out the flavors. This recipe is also great for areas that don’t have access to a lot of fresh ingredients, just three ingredients all which are able to be kept on the shelf for a long time! If you don’t like chocolate try doing dried cranberries or maybe walnuts. This recipe is forgiving so test out different ways to make it! This recipe is also great for new bakers both young and old! It’s also great if you’re in a time crunch, I made my cookies from start to finish in less then an hour!
