Peanut Butter Kiss Cookie Recipe…

This recipe takes a little help from the store. Yep…store bought cookie mix!!! But hold on! If you make this according to directions your cookies will be flat and hard…so this is my adaptation to make this cookie mix come out like cookies you spent all day making! This is a quick recipe you can do from start to finish in less then a half hour. This is also a good recipe for the beginning Baker or someone who doesn’t like baking or doesn’t have time to bake! So preheat your oven to 350° and let’s take a look at this recipe!

Here are the ingredients, one pack of peanut butter cookie mix, one egg, 3 tablspoons of apple sauce, tablespoon of water, some flour and Hershey kisses (or whatever chocolates you have in the pantry)
Here is the instructions on the back of the package…notice I am using apple sauce in place of oil….you can use either, I am just making mine oil free today! Besides that change everything is the same, only addition is having extra flour on hand. Extra flour is vital!
Step 1. Put the 3 tablespoons of apple sauce (or oil) in the bowl along with the egg and baking mix. Notice I’m not adding flour yet!
Mix those ingredients together and this is what you get….it’s very sticky and will make a mess if you try to roll it into a ball. This batter as is will make a flatter hard cookie. So if you want a nice soft cookie proceed to step 2!
Step 2: I added about 3 tablespoons of flour and mixed it in. Look at the difference, now the once super wet sticky dough is now more like playdough. This will make for a nice soft cookie!
I can roll this into a ball now, there is some stick to my fingers but when rolling around in my palms to form a ball I have no sticky hands at all. This is how you know you have added the right amount of flour!
Step 3: roll the dough to about the size of ping pong balls. And put them on your cookie tray. Bake for about 10 minutes in your oven that is preheated to 350°
After 10 minutes they look like this. See how the top has cracks in it? That’s perfect!!! If there isn’t cracks then it’s not done yet!
Step 4: have your chocolates unwrapped and ready to go. Push the chocolate in each cookie as soon as they are out of the oven. Allow to cool on the cookie sheet. They may seem too soft but once they cool they will be cooked to perfection!!!

Notice on the left I have a few cookies with Rolos in them instead of Hershey kisses. Be creative, use Reese’s or any chocolate candy you like! This is left over Easter and Christmas candy I had in the cupboard! For you gluten free people, if you can find a gluten free cookie mix you like give this a try, just be sure to use gluten free flour as well, might take a bit of trial and error but I bet you can acheive similar results!
